Collection: Pork

We stock Duroc Pork from Waratah Farm, based in the King Country. Waratah is a closed circle, regenerative farming system that treats both it's animals and its environment with care and kindness.

One farm and one breed gives us a beautifully consistent product to work with. The Duroc has a rich ruby red colour, and a far more developed flavour profile than conventional pork.

We age our carcasses for a few days to maximise moisture loss, ensuring a beautiful crispy skin is achievable every time!
